Winning Mild Salsa Recipe:
Monica Wurtzberger
8-10 c tomatoes, blanched, skinned and chopped
1 ½ cup onion chopped
1 ¾ cup peppers ( green, red, variety)
½ cup hot peppers (jalepenos)
6 tsp minced garlic
2 tsp cumin
2 t black pepper
1/8 cup pickling salt
1/3 cup sugar (white)
1/3 cup vinegar
2 – 12 oz. can Hunts tomato paste
Drain extra juice from chopped tomatoes. Stir all together and cook ½ hour. Stir often. Makes 7-8 pints. Put in hot jars and seal.
Winning Hot Salsa Recipe:

20 cups chopped tomatoes
8 cups chopped onions
2 cups sugar
2 1/2 cups vinegar
3 Ty Hot Chile peppers
2 medium zucchini chopped fine
7 Jalepeno peppers
8 Banana peppers
2 Large green peppers
1 Large red pepper
5 Tablespoons pickling salt
4 Tablespoons chile powder
4 Tablespoons Cayenne pepper
5 Tablespoons garlic
2 Tablespoons Paprika
Mix all together. Bring to a rolling boil. Cook for 20 minutes. Stir often. Remove one cup of juice and cool in fridge. After it is cool, add 1 1/2 cups corn starch and stir into salsa. Bring to a boil. Put into pint jars and seal “and there you have it!”
Enter your homemade salsa in the 10th Annual Contest! There will be two categories this year….mild and hot.
Bring your homemade salsa to the KNUJ Studios, 317 North Minnesota, New Ulm, by 9am on Friday, September 18. Label your salsa with name, address and phone number and bring your recipe along. Also, label your salsa as mild or hot.
Enter your salsa for your chance to win gift certificates from Hy-Vee and other prizes from KNUJ. Tony Guggisberg will be awarding his “Tony Award” again this year. Tony Guggisberg from River Creek Nursery will also be giving certificates for a 4-pack of tomatoes or peppers to be redeemed in the spring of 2015 to anyone who enters our salsa contest.
