Denver Breakfast Skillet – submitted by Patti Lee Bock of New Ulm

6 strips bacon, diced
1/2 c diced onion
1/4 c diced green pepper
2 c frozen potatoes O’Brien
6 large eggs, beaten
3/4 c finely shredded cheddar cheese
black pepper

In large skillet fry bacon over med-high heat. Remove bacon from skillet and set aside. Cook onion, green peppers in bacon drippings 2-3 min. Stir in potatoes and cook until slightly crispy. Reduce heat to medium, pour in eggs and cook until almost set. Sprinkle with cheese and reserved bacon and cook until cheese melts.
