Salsa – 1st Place in the ‘Mild’ category for the 12th Annual Salsa Contest – submitted by Ricky Neidecker of New Ulm

20 c tomatoes
8 c onions (white)
2 c sugar
2 1/2 c vinegar
7 jalapeno peppers
8 banana peppers
2 green peppers
1 red pepper
5 T pickling salt
4 T chili powder
4 t cayenne pepper
5 T garlic powder
2 T paprika
1 heaping T corriander
1 zucchini
1 bunch cilantro

Mix all together. Bring to a boil. Cook 20 minutes. Remove 1 cup of juice and cool it. Then add 1 1/2 c cornstarch diluted in about 1/2 cup of water. Stir into salsa. Bring to a boil. Put into jars and seal in hot water bath.
