Grilled Tequila Lime Shrimp on a Stick

Mix together the following ingredients in a large resealable bag:

2 T lime juice
2 T tequila
1/4 c olive oil
2 cloves garlic, minced
pinch of cumin
ground black pepper to taste

Add 1 lb large shrimp, peeled and deveined, reseal bag and refrigerate for one to four hours before grilling. Soak skewers in water for at least 30 minutes to prevent burning.

Preheat grill to medium high heat, lightly oil grill grate and place about 4 inches from heat source.

Drain and discard marinade from shrimp. Thread 5 to 6 shrimp onto skewers and cook, uncovered on preheated grill until shrimp turn pink, 5 – 7 minutes, turning once. Serve with lime wedges for garnish.

Can also cook on your stovetop on medium high heat in the marinade for 5-7 minutes or until shrimp turns pink, turning once.
