Upside Down Rhubarb Cakesubmitted by Carol Waibel of Searles

1 yellow cake mix
2 or 3 cups rhubarb, diced
1 c sugar
1 c cream

Mix cake mix according to directions on box. Pour into greased 9 x 13″ pan. Put diced rhubarb on top of raw batter. Sprinkle 1 cup of sugar over rhubarb and pour cream over all. Bake at 350 ° for 35-40 minutes or until toothpick inserted comes out clean. Can invert or leave in pan.
