Charlie’s Lemon Pie – submitted by Alex Schroeder, age 8, of Courtland

1 graham cracker or shortbread crust
1 – 8 oz. package cream cheese, softened
1 can sweetened condensed milk
1/2 c lemon juice (fresh squeezed or from a bottle)

Cream together cream cheese and lemon juice. This must be blended well. Next, add condensed milk and mix well. Pour into crust. Refrigerate for several hours or overnight. This is a great spring recipe!
