No-Bake Cheesecake with Strawberry Sauce

Crust:

2 cups graham cracker crumbs

3 tablespoons sugar

6-1/2 tablespoons butter

 

Filling:

8oz cream cheese

1/4 cup sugar

1-1/2 tsp vanilla

1 cup whipping cream

 

Topping:

1 can strawberry pie filling

1 cup fresh strawberries, halved

In a mixing bowl, combine all crust ingredients and press into a greased 9 inch pan. Cover with plastic wrap and chill until ready to add the filling and topping. For the filling, beat the cream cheese and sugar until smooth. Add vanilla and beat again. In another bowl, beat the whipping cream and then add it to the cream cheese mixture. Pour the filling on top of the pie crust and smooth. Place in the refrigerator for a half hour and then add strawberry pie filling to the top and arrange halved fresh strawberries and blueberries on top. Chill overnight.
