Coconut Ice Cream Dessert
36 Ritz crackers, crushed
1 stick butter
1 tbsp sugar
Mix crackers, butter and sugar. Pat into the bottom of a 9×13 inch pan. Add chopped walnuts, if desired. Save some crumbs for topping.
2 small boxes instant coconut cream pudding
1 cup milk
1/2 gallon vanilla ice cream, softened
1 container Cool Whip
Mix pudding and milk; then add softened ice cream. Spread over crumbs crust. Spread Cool Whip over top. Garnish with remaining crumbs and walnuts. Freeze.
