Cranberry Almond Drops
2 cups white chocolate chips
1-1/2 cups dried cranberries
1-1/2 cups roasted salted almonds
In a microwave safe bowl, melt 2 cups white chocolate chips for 90 seconds at medium power. Heat and stir in 30 second intervals until smooth, another 1 to 2 minutes. Using a spatula, toss in 1-1/2 cups dried cranberries and 1-1/2 cups roasted salted almonds in the white chocolate until fully coated. Line a cookie sheet with wax paper and place heaping tablespoons of mixture. Refrigerate until chocolate sets; about 20 minutes.
