Smoked Sausage Harvest Casserole

2 tbsp butter

5 cups chopped green cabbage

1 medium onion, cut into halves and sliced

1 cup sliced carrots

1 – 15oz can drained red beans

1 – 8oz can stewed tomatoes

1/2 cup Parmesan cheese

1 tbsp vinegar

2 tbsp flour

dash ground black pepper

1 lb smoked sausage

Heat oven to 350 degrees. Melt butter in Dutch oven over medium high heat. Add cabbage, onion and carrots; sauté 5 minutes. Stir in beans, tomatoes and vinegar. Sprinkle cheese, flour and pepper over cabbage mixture; stir in. Spoon into greased shallow 2 quart casserole. Cut sausage into serving size pieces. Arrange on top of cabbage mixture and push down partially. Cover and bake 40 minutes or until hot.
