Pumpkin Sandwich Cookies with Cream Cheese Frosting

Filling:
3 cups powdered sugar

4oz cream cheese, softened

1/4 cup butter

1/4 cup buttered flavored Crisco

1 tsp vanilla

2-3 tablespoons milk

Cream together filling ingredients. Add additional milk to attain smooth consistency for spreading.

Cookies:
3 cups all purpose flour

1 tsp salt

1 tsp baking powder

1 tsp baking soda

2 tablespoon ground cinnamon

1 tablespoon ground cloves

1 tsp nutmeg

2 cups firmly packed brown sugar

1 cup vegetable oil

3 cups cooked pumpkin, chilled

2 large eggs

1 tsp vanilla

Sift together all dry ingredients in large bowl and set aside. In another large bowl, blend together oil and sugar and then add the pumpkin eggs and vanilla. Add dry ingredients to creamed mixture by cup-full until all dry ingredients are mixed into the creamed mixture. Using an ice cream scoop, drop cookie dough onto prepared cookie sheet. Bake in 350 degree oven for 9-11 minutes. Let cool. Then assemble the cookies by frosting one cookie and top with another to make a sandwich.
