Green Tomato Cake with Caramel Frosting

3 cups drained green tomatoes

1 tablespoon salt

1/2 cup oil

2 cups white sugar

2 cups flour

4 eggs, beaten

2 teaspoons pumpkin pie spice

1 teaspoon baking soda

1/2 cup chopped walnuts

Add salt to green tomatoes and set aside. Mix the remaining ingredients together. Add the green tomatoes/salt mixture. Bake at 350 degrees in a 9×13 inch pan for approximately 40 minutes.

Caramel Frosting:
 8oz cream cheese

4 tablespoons butter, melted

8 tablespoons brown sugar

2 teaspoons rum flavoring

2 teaspoons pumpkin pie spice

4 cups powdered sugar

Mix until smooth and spread on cake.
