Carrot Bars

4 eggs

2 cups sugar

1-1/2 cup salad oil

2 cups sifted flour

2 tsp soda

2 tsp cinnamon

1/2 tsp salt

3 cups finely grated carrots

1-1/2 cups flaked coconut

1-1/2 cups walnuts

Beat egg until light. Gradually beat in sugar. Alternately add salad oil and flour, sifted with soda, cinnamon and salt. Mix well. Fold in carrots, coconut and walnuts. Spread evenly in two greased 9×13 inch pans. Bake in 350 degree oven for 25-30 minutes. Set pans on rack to cool. Spread with cream cheese frosting.

Frosting:

3oz cream cheese

1/4 cup butter

1 tsp vanilla

2-1/2 cups powdered sugar
