Butternut Squash Bake

1/3 cup butter or margarine

3/4 cup sugar

2 eggs

1 – 5oz can evaporated milk

1 tsp vanilla

2 cups mashed, cooked squash

Cream butter and sugar; beat in eggs, milk and vanilla. Stir in squash. Mixture will be thin. Pour into greased 7x11x2 inch pan. Bake, uncovered, at 350 degrees for 40-45 minutes until almost set.

Topping:
1/2 cup Rice Krispies cereal

1/4 cup brown sugar

1/4 cup chopped pecans, optional

2 tablespoons melted butter

Combine topping ingredients and sprinkle on top. Return to oven for 5-10 minutes.
