Baked Zucchini Casserole

1-1/2 lb zucchini

1-1/2 cups fresh bread crumbs

3/4 cup cheddar cheese, grated

1/4 cup minced onion

2 tablespoons parsley

2 tablespoons butter

1-1/4 tsp salt

1/8 tsp pepper

2 eggs, beaten

Slice zucchini; cook in salt water for 5-7 minutes. Drain and add rest of ingredients, except butter and ¼ cup cheese. Place in 2-quart casserole dish. Dot with butter; sprinkle with cheese and bake uncovered for 30 minutes at 350 degrees or until browned on top.
