Squash Casserole

3 cups squash, cooked

1 medium onion

1 stick butter

1/2 bag stuffing mix

1 can cream of chicken soup

1 – 2oz jar pimentos

1 – 8oz container sour cream

salt and pepper to taste

Cook squash and onion together until tender and drain. Mix that with some of the stuffing mix and then with the remaining ingredients. Put in a casserole dish and top with remaining ingredients. Bake at 350 degrees for 35-40 minutes.
