Stuffed Baked Potatoes 14 Mar 13

6 large potatoes
2 tbsp butter
2 tsp salt
1 cup grated cheddar cheese
2 cup minced cooked ham
1/2 cup minced onion
1 cup hot milk
1/8 tsp pepper

Bake potatoes; when done, cut off a slice from the top of each potato and scoop out centers. Mash potatoes; add hot milk, butter, seasonings and cheese. Beat with an electric mixer until light and fluffy. Add minced ham and onion. Fill potato shells, piling the mixture on top. Place potatoes on a baking pan in a 350 degree oven for 20-25 minutes.
