Easter Egg Bake 20 Mar 13

1 loaf French bread, cut into 1 inch slices
12 eggs
1 cup milk or cream
1 lb ham, cubed
1 can mushrooms, drained
1 small onion, chopped
1 small green or red pepper, chopped
2 cups Colby Jack cheese
salt and pepper to taste

Beat together eggs and milk and set aside. In a greased 9×13 inch baking pan, lay out bread slices to create a single layer. Top with ham, mushrooms, onion and peppers. Pour egg mixture over ingredients. Top with shredded cheese. Cover with aluminum foil and bake at 350 degrees for 35 minutes. Remove foil and bake an additional 10-15 minutes until egg bake is set. The egg bake will be light and fluffy with done.
