Blueberry Cobbler 25 Mar 13

3 cups blueberries
1 tablespoon cornstarch
1/2 cup brown sugar
1 cup cold water
1/2 cup, plus 1 tablespoon softened butter
1 tablespoon lemon juice
1 cup flour
1/2 cup sugar
1-1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk

Mix together cornstarch, brown sugar, water and blueberries. Slowly heat until mixture thickens. Add 1 tablespoon butter and lemon juice. Take off heat. Sift together flour, sugar, baking powder and salt. Fold in milk and ½ cup butter. Pour blueberry mixture in buttered 8×8 inch baking dish. Dollop batter over the top. Sprinkle 1 tablespoon sugar and a pinch of nutmeg over the batter. Bake at 350 degrees for 45 minutes.
