Wild Rice Soup 06 Feb 13

1 small onion, diced
2 T butter or margarine
2 cups mashed potatoes
milk
1-1/2 cups cooked wild rice
1-1/2 cups grated cheddar cheese
1 cup diced ham

Saute diced onion in butter. Blend in mashed potatoes and add milk until the mixture is creamy. Add cooked wild rice, cheddar cheese and diced ham. Heat on medium-low heat until warm. Do not boil.
