Tortilla Soup 13 Feb 13

8 cups chicken broth
4 fresh tomatoes, chopped
1 onion, chopped
1 can tomato paste
4oz green chilies, chopped
1/4 cup fresh parsley, chopped
1/4 tsp thyme
Monterey Jack cheese

Simmer all of the above for 35-40 minutes. To assemble: Put 4-5 broken tortilla chips in the bottom of a bowl. Add 1/4 cup shredded cheese; then pour in the hot soup to fill bowl.
