German Potato Soup 11 Feb 13

2 medium chopped onions
4 tbsp butter
4 cups grated, cooked potatoes
1 cup chopped ham or bacon
2 cloves garlic, minced
2 tbsp flour
4 cups milk
2 large egg yolks
salt and pepper to taste

Brown onion and garlic in butter until onion is golden. Add flour, stirring until smooth. Add potatoes and cook for 2 minutes. Gradually add milk; stirring until smooth. Add ham or bacon, salt and pepper. Add egg yolk, stirring until creamy and soup is heated through.
