Peanut Brittle 18 Dec 12

2 cups sugar
2 teaspoons butter
1/2 tsp vanilla
1 cup coarsely chopped nuts

Melt sugar in a heavy iron frying pan over moderate heat, stirring constantly until all lumps have disappeared and sugar is a rich golden color. Remove from heat, stir in ½ tsp vanilla; add butter and pour over nuts, which have been spread in a shallow, well greased pan. When cold, break into pieces.
