Zucchini Sauted Vegetable Medley 01 Oct 12

 

2 medium onions, sliced
1 clove garlic, minced
2 medium zucchini, cut in 1/2″ slices
2 tomatoes, diced
1 small eggplant, peeled and chopped
1 green pepper, chopped
1 bay leaf
salt and pepper
4 slices bacon

Cook onion and garlic in hot oil until onion is tender. Add all remaining ingredients, except bacon. Cover and simmer 30 minutes; stirring occasionally. Fry bacon until crisp; drain and crumble. Add to vegetables and simmer uncovered 10 minutes. Remove bay leaf and garlic. 6-8 servings.
