Squash Casserole 20 Aug 12

3 cups squash, cooked
1 medium onion
1 stick butter
1/2 bag stuffing mix
1 can cream of chicken soup
1 – 2oz jar pimentos
1 – 8oz container sour cream
salt and pepper to taste

Cook squash and onion together until tender; drain. Mix with some of the stuffing mix and then with the remaining ingredients. Put in a casserole dish and top with remaining ingredients. Bake at 350 degrees for 35-40 minutes.
