Harvard Beets 23 Aug 12

2 lbs beets
1 tbsp cornstarch
1/2 cup vinegar
1/2 cup sugar
1/2 cup water
1/2 tsp salt

Cook beets and peel. Cut in cubes or slices. Mix sugar, water, cornstarch, salt and vinegar. Pour over beets and cook 5 minutes. Add a tablespoon of butter, if desired.
