Eggplant Casserole 22 Aug 12

2 cups eggplant, cooked and drained
1 tsp salt
1/2 tsp sage
1/4 tsp pepper
1 tsp onion, chopped
1 cup crackers, crushed
1 cup cheddar cheese, cubed
2 eggs, beaten
3 tbsp butter
1 cup milk

While eggplant is hot, add butter and cheese; mix until melted. Add remaining ingredients; mix well. Pour into 1-1/2 qt baking dish. Bake at 350 degrees for one hour or until golden brown.
