Cheesy Mashed Potatoes 04 Jun 12

8 medium potatoes
1 stick butter
1/2 cup sour cream
1-1/2 cups shredded cheese
1 cup chopped cooked bacon

Peel and cut potatoes. Boil in salted water until tender. Drain and mash. Mix in butter. Mix in sour cream and 3/4 cup of bacon and 1 cup of the cheese. Spread potatoes in casserole dish. Sprinkle with remaining cheese and bacon. Bake in 350 degree oven for 20 minutes.
