Garden Veggies Casserole 29 Feb 12

2 cups cooked rice
1 cup grated cheese
1/2 cup chopped onion
1 cup cauliflower
1 cup chopped broccoli
1/2 cup sliced celery
1/2 cup sliced carrots
1/2 cup sliced zucchini
2 cups pasta sauce
1 clove garlic, minced
2 tsp dry basil

Preheat oven to 350 degrees. Combine rice and half of cheese. Mix well. Place in 10x6x2 inch baking dish. Meanwhile, steam the vegetables 5 to 7 minutes until tender. Spoon vegetables over rice-cheese mixture. Combine pasta sauce, garlic and basil. Pour over vegetables. Top with remaining cheese. Bake at 350 degrees for 30 minutes.
