Chocolate Cupcakes 22 Feb 12

1-1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup water
1/4 cup plus 2 tbsp vegetable oil
1 tbsp vinegar
1 tsp vanilla

Combine flour, sugar, cocoa, baking soda and salt in medium bowl. Add water, oil, vinegar and vanilla. Beat with mixer until batter is smooth. Pour into paper-lined muffin tins, filling each 2/3 full. Bake at 375 degrees for 16 to 18 minutes.
