Wild Rice Soup 25 Jan 12

2 cups cooked turkey
2 cups cooked wild rice
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cups sliced fresh mushrooms
4 cups turkey broth
1/2 cup flour
6 tbsp butter
1 cup half & half

Saute onions, celery and mushrooms in the butter. Blend in flour. Gradually add broth. Cook, stirring constantly, until mixture comes to a boil Boil 1 minute. Stir in wild rice and turkey. Simmer about 5 minutes. Blend in enough half and half until soup is desired consistency. Season with salt to taste.
