Broccoli-Cheese Soup 13 Jan 12

1/2 stick butter
1/2 onion, grated
2 carrots, grated
1 box frozen chopped broccoli
1 can cream of chicken soup
1 soup can milk
1/2 to 1 lb Velveeta cheese, grated
mushrooms, optional

Saute onions and carrots in butter until soft. Cook broccoli according to package directions and drain. Add together and heat over medium heat. Add soup and milk; heat through. Add grated cheese and cook until cheese melts.
