Peanut Brittle 09 Dec 11

2 cups sugar
2 tsp butter
1/2 tsp vanilla
1 cup coarsely chopped nuts

Melt sugar in a heavy iron frying pan over moderate heat, stirring constantly, until all lumps have disappeared and sugar is a rich golden color. Remove from heat, stir in 1/2 tsp vanilla, add butter and pour over nuts which have been spread in a shallow, well greased pan. When cold, break into pieces.
